CORDON BLEU STUDENTS BECOME
HOLIDAY CHEFS AT SHERATON FAIRPLEX
Hotel Staff Serve Nearly 8,000 Holiday Meals

Holiday parties are still an important part of American corporate culture. During the month of December, special lunches and dinners for businesses of all sizes have kept the staff at Sheraton Fairplex hotel at the top of their game. This year, newly appointed Executive Chef Justin McKinney found a cast of “young, willing and able” Cordon Bleu students from the California School of Culinary Arts in Pasadena to assist him with festive parties in the hotel’s ballroom, Fairplex’s Avalon restaurant, the Millard Sheets Center for the Arts, Top of the Park Restaurant and the 33,000-square-foot Fairplex 8, all transformed by Fairplex staff into holiday wonderlands. 
McKinney joined the Sheraton Fairplex hotel staff on December 4, just in time for the Christmas party crunch. Three to 12 Cordon Bleu student chefs join him each day to find out “what the real world is like,” says Chef McKinney, who graduated at the top of his class in the Culinary Arts Le Cordon Bleu program. All students complete a certain level of culinary training before they are eligible to participate in internship opportunities, assisting with food preparation and production. Students also have an opportunity to serve at carving stations during holiday events.
McKinney came to Fairplex from the Westin Hotel, Pasadena, where he had served as executive sous chef since 2006. He also was part of the opening culinary team for Wolfgang Puck’s successful Cut Restaurant in the Beverly Hills Four Seasons Hotel. McKinney made his mark at Fairplex during this year’s National Hot Rod Association Finals when he helped the Sheraton culinary team feed more than 40,000 people in four days, the Sheraton’s largest catering function.
